This is a diabetic recipe but has plenty of flavor. It calls for catfish but any white fish fillet should work with this.
1 pound (16oz) catfish fillets (or white fish of your choice)
2 tsp Real Mayonnaise (not diet)
2 tsp all-purpose flour
1/2 cup plain nonfat yogurt
1/2 tsp white wine vinegar
4 tsp chopped pimiento-stuffed green olives
1/2 tsp ground celery seed
1/2 tsp paprika
1/4 tsp freshly ground white OR black pepper
1/4 tsp thyme
1 tsp fresh dill (or a pinch of dried dill per fillet)
1 lemon, cut into 4 wedges (optional)
Freshly chopped OR dried parsley (optional)
Preheat the oven to 350 deg F.
Begin by preparing a baking dish and spraying it with nonstick spray. Rinse the fillets in water and dry them between two layers of paper towels. Arrange the fillets in the baking dish.
Separately, in a small bowl mix together the mayonnaise, flour, yogurt, vinegar, olives, celery seeds, paprika, pepper (if you're using it), and thyme. Spread the mixture over the fish and then sprinkle with the dill.
Bake for 15 minutes, or until the fish flakes when touched with a fork. Afterwards, garnish with the lemon wedges and parsley if desired.
The lemon wedges add a nice flavor to the catfish.
