I know we had a grilling diary last week, but I completely forgot there was no one scheduled for today's WFD until last night. But by lucky coincidence I just happened to get my sexy new grill yesterday! So I'm going to talk about my new toy and what I'm looking forward to making on it.
It's a classic Weber kettle charcoal grill with some nice features such as the lid holder, the side work table, and an ash catcher at the bottom that you just detach and empty. Oh, and there are 3 tool knobs to hang things on on the side too.
It's kind of dark but my new bamboo grill brush is hanging off the tool knob, and my new blue welder's gloves and a new spatula are on the rack on the bottom. The work table to the right side is extended but it folds down which is great for our little patio.
I do believe I'm going to have to invest in pixxer's favorite recommended cookbook soon!
So tonight I'm going to grill and per my sweetie's request, I'm going to do BBQ chicken.
My mom used to make this sauce for her chicken that imprinted itself upon me and I hadn't made it in years until we got our old grill a couple summers ago. I used to have the recipe she wrote on a piece of notepaper but it's long lost. She actually got the recipe from our next door neighbor. It had ketchup, Worcestershire, soy sauce, and I think French salad dressing. When I made it I left out the French salad dressing and used some red wine vinegar, some brown sugar, and other spices. This is a sauce that you baste the chicken with on the grill, not a marinade. I may not have gotten it true to the original but when I tasted it, I was transported back to when I was a kid.
Diane's BBQ Sauce for Chicken
About 1 cup of ketchup (depending on how much chicken you have, it may be up to 2 cups)
2 tblsp of soy sauce
1 tblsp of Worcestershire sauce
1/4 cup of red wine vinegar
2 tblsp of brown sugar
1 tsp of garlic powder
1 tsp of onion powder
Fresh ground black pepper to taste
Other spices as desired such as cumin, paprika, red pepper flakes, cayenne etc.
In a small saucepan combine all of the ingredients over low heat and simmer until sugar & garlic & onion powder are dissolved. Taste for seasoning then let cool and pour into a bowl and baste chicken with a brush.
