Over the course of a year 7-11, with over 8,000 stores in the US will save over 81 million gallons of water, preserve over 4 million square feet of land, and prevent 191 million grams of CO2 emission just by switching to a plant based mayo. That's how significant a switch to a plant based food can be when you build on small steps.

In “small steps in the right direction” news, 7-11 has just announced that they will be serving only the Hampton Creek’s Just Mayo brand of plant-based mayonnaise in all of their eight thousand U.S. stores.The mayo brand, owned by Hampton Creek, is entirely plant-based and one of the first products of its kind to gain mainstream appeal despite the fact that it contains no animal ingredients. The eggs that would normally appear in the creamy, white sandwich spread have been usurped by yellow peas in Hampton Creek’s “Just Mayo” – lending a creamy texture and the umami flavor that mayo aficionados of all stripes enjoy.
This widespread brand recognition is starting to translate into the company’s other offerings as well. Their Just Cookies, that features plant-based egg replacers in its dough, was recently picked up by Compass Group, the largest food service group in the world, as an offering in their corporate catering packages, and their newly released Just Ranch is now available alongside Just Cookie Dough in large chain stores such as Safeway, Target, Fry’s and Walmart.
With products like these creating such buzz, anticipation for their entirely plant-based scrambled egg alternative, aptly named Just Scramble, has continued to build since the company announced its development in 2013. Backed by large investors such as Bill Gates and Eduardo Saverin, co-founder of Facebook, the eggless eggs look like they’ll finally be making their debut at the end of 2015 – to hopefully as mainstream of a release and reception as the other wildly successful options.
I had a little fun with the title, but you get the idea; small steps in our consumption, when taken together can have a huge benefit to our health and to the future livability of our planet.
