Yes, we’re in for taco trucks everywhere. You think Starbucks, Dunkin (for you Northeasterners) or McDonalds is overrepresented?? Not even close to the impending tacotruckapalooza! I must admit, the only place I’ve ever had tacos from a truck was at Netroots Nation in Detroit a few years ago. But we have taco/burrito night regularly here at Casa Brillig. I used to prefer crunchy tacos filled with seasoned ground beef, refried black beans (the jalapeno ones from Trader Joes), onions, tomatoes, hot peppers, a little bit of avocado and cheese. I’d vary those with burritoes because those were easier to eat without spilling it all over the plate :-). Others in my family put lettuce on theirs, but I have a real dislike of lettuce that decades of trying to overcome it have not cured. Ask Mr. Brillig someday what makes him laugh at a dinner, and he’ll often say “when brillig tries to eat lettuce and she makes this weird face we call Salad Face, and thinks nobody notices”.
Alas, Type 2 diabetes brought my days of corn and wheat tortillas (not to mention refried beans) to a screeching, spiking blood sugar halt. But fear not, because where there’s a will, there’s a way and I was not to be relegated to the Substitute Dinner Corner while everyone else indulged. Careful measuring and testing demonstrated that if I ate the taco beef, smaller amounts of onions and tomatoes but larger quantities of cheese and avocado plus enough hot peppers to make my mouth tingle, I could stay within the carbohydrate levels my stupid pancreas doesn’t have fits over. And then I discovered Trader Joe’s Reduced Carb Tortillas ::cue Hallelujah Chorus::. With a mere 4g net carbs per tortilla, I can have two and still stay healthy!
So, how do you like YOUR tacos? Crunchy or Soft shell, or would you prefer a tostada or bowl instead? Do you add rice, and do avocados have a place in your taco?
