How Do You Like Your Eggs ?
I take mine up, as in, I'll have the sausage and eggs with the eggs up. Every place that serves breakfast will have fried eggs on the menu. It usually says, Two eggs any style, choice of bacon, sausage or ham. We've all had it at one time or another, it's the Ol' Standby. In fact, at my very favorite breakfast spot in Arizona, the Bisbee Breakfast Club, they list it that way on their menu. You'll usually get hash browns too. I'm pretty sure that this breakfast; meat, eggs and potatoes, originated in Germany, and went from there to England and the Colonies. I always get my eggs up because I like the yolks runny. I'll sop them up with toast or a biscuit. I like the way they they taste mixed with salsa in Huevos Rancheros. Sometimes I'll get a Pancake Sandwich, which is just a short stack served with a fried egg on top. Then I get runny egg yolks mixed with butter and syrup. Yum. Every breakfast joint will also have an omelet or two on the menu. This is invariably an American-style filled omelet, often called a Denver omelet. What you won't find on the menu of your favorite greasy spoon is a classic French omelette. I just made a couple of these on Sunday and that's what this diary is about.
Our text this morning is The Escoffier Cookbook: A Guide to the Fine Art of French Cuisine by Auguste Escoffier, the Chef of Kings and the King of Chefs. I have the abridged, American edition first published by Crown Publishers of New York in 1969 and now in its umpteenth printing if you're following along at home. The numbers in bold are the recipe numbers that appear in this edition. When Le Guide Culinaire first appeared in 1903 the French cuisine was still very rigid and particular in every detail. Everything had to be done just so, deviation was not tolerated. The creativity that we expect from our chefs these days, the mixing of techniques and ingredients, was frowned upon. Good chefs didn't do fusion. Still, haute cuisine began in France and the classic techniques are still useful. Every foodie should try a few of Escoffier's recipes. We begin with Chapter XII, Eggs.
OF ALL the products put to use by the art of cookery, not one is so fruitful of variety, so universally liked, and so complete in itself as the egg. There are very few culinary recipes that do not include eggs, either as principal constituent or as an ingredient.
The many and various egg-preparations constitute chiefly breakfast or luncheon dishes; nevertheless, at a Lenten dinner they may be served as entrées with advantage, for, at a time when fish, shellfish and game fish are the only resources in this respect, eggs form a pleasant and welcome change.
The recipes begin with
395—EGGS ON THE DISH, then 20 different types of poached eggs, then hard-boiled eggs, eggs in cocotte, scrambled eggs and then fried eggs.
432—FRIED EGGS
In the long series of egg-preparations, fried eggs are those which hold the least important place, for the fried eggs which are so commonly served at breakfast in England and America are really eggs á la poéle. The real fried egg is almost unknown in England and America. As a rule, the garnish given to this kind of eggs is served separately, while the latter are served, either on a napkin or on pieces of toast, with a little fried parsley laid in the middle of the dish.
He does not approve of our fried eggs, sunny side up or over easy. While we do ours on an oiled grill, the true French fried egg is done in a pan, one at a time, in enough oil to float the egg. After several types of fried eggs we come to the omelet.
492—THE PREPARATION OF OMELETS
Heat the butter in the omelet-pan, until it gives off the characteristic nutty smell. This will not only lend an exquisite taste to the omelet, but the degree of heat reached in order to produce the aroma will be found to ensure the perfect setting of the eggs.
Pour in the beaten and seasoned eggs, and stir briskly with a fork, in order to heat the whole mass evenly. If the omelet is to be filled inside, this ought to be done now, and then the omelet should be speedily rolled up and transferred to a dish, to be finished in accordance with the taste of the diner.
When the omelet is on the dish, a piece of butter may be quickly drawn across its surface, to make it glossy.
Here's a little demonstration from Jacques Pépin. Jacques is my favorite TV chef. We don't have cable or satellite TV so I haven't seen very many TV chefs but Jacques was trained in the classic French tradition and I have a couple of his books. He'll do two types of omelet, the country style and the classic
502—OMELET WITH HERBS. He makes it very clear that there is no one correct way to do it but I don't like the country style. I think brown eggs, scrambled or in an omelet, are over-cooked and taste bitter. To borrow a maxim I first heard in a different context, if it's yellow it's mellow, if it's brown flush it down.
So we had some tarragon in the fridge, I had done a 62—BEARNAISE SAUCE last week, and so as not to waste the herbs I made a couple of Fine Herb Omelets. I didn't plate them up fancy á la navajo and they weren't exactly the perfect shape but the flavor and texture were correct and they were not browned.

On May 13th, the SFKossacks welcomed LeftOfYou and Expat Okie visiting from Chicago. They're here on a cruise up the West Coast after LeftOfYou retired last week from the US Postal system. What a pleasure to meet them and enjoy some quintessential San Francisco cuisine — Chinese deem sum.
We had a wonderful gathering and fantastic food. The bonus for Daily Kos is that LeftOfYou offered to lead a new group for St. Louis, Missouri when he moves there soon. I took him up on that. What a great day! We wished them well as they headed up the coast to Vancouver.

The Asheville Kossacks had another successful meet-up with excellent food supplied and prepared by Gordon20024. There's excellent food pr0n in the diary, btw. Steelergrrl brought tomato plants to give away. randallt handed out large Register to Vote signs along with information handouts on the new North Carolina voting law and a comprehensive guide to obtaining an ID for voting. Asheville Kossacks have been setting the example of GOTV for the rest of us. Kossack cultjake told an informative story on his new work on the precinct level of politics. randallt also made Asheville Kossack nametag lanyards for everyone. I'm impressed with all the ideas he's thought of to Connect, unite and activate his group.

Daily Kos Detroit VA Hospital Service Project
