Do You Like Kimchi ?
I do. Love the stuff. So I made a batch last week. This was a fine coincidence because yesterday was Chuseok, or Harvest Moon Day, which I didn't even know about until I started doing research for this diary. It's a big holiday among Koreans. It's their equivalent of Thanksgiving. It's a moveable feast and they usually make it a three-day affair, including the days before and after the Harvest Moon. It's a day to remember the ancestors, many families lay wreaths on the graves of those who have passed on, and it coincides with the harvest so food is a big part of the celebration. Anyway, I found what looked like a good recipe in a Korean cookbook a couple of months ago and last week I gave it a try. It's surprisingly easy to make.
Kimchi, like sauerkraut, is a way of preserving cabbage. Koreans have been making various types of kimchi since forever, but the most popular kind, the one with red chile in it, can't be more than a few hundred years old. Chiles come from the Americas so they could only have been making red chile kimchi since after the Columbian Exchange when the chile plant was introduced to East Asia by the Spanish or Portuguese. The traditional kind is called Poggi Kimchi. Whole, or halved, heads of Napa Cabbage are covered with a spice paste and packed into big clay jars to ferment. The fermentation is what preserves the cabbage. Sometimes the jars were buried to keep the kimchi from freezing. The kind you buy in jars in Asian supermarkets is called Mak Kimchi. The cabbage for this kind is cut into pieces about two inches square. This is the kind I made.
Here's the recipe I used:
4 heads Napa Cabbage, chopped, degorged and dried or spun
½ c. yellow onion, sliced thin
4 t. minced garlic
2 t. grated ginger
2 T. fish sauce
2 t. salted shrimp
2 t. sugar
½ c. Korean chile flakes
4 green onions, green part only, chopped
½ c. water.
Make a paste of everything but the cabbage in a mortar or food processor. Mix the spice paste with the cabbage. Pack it into a 2 quart jar and cover tightly. Leave it out to ferment for 3 days at room temperature. Refrigerate and eat.

Here's the final result with a jar of store-bought for comparison.
I made the Kimchi last Wednesday night and served it Saturday night with Kalbi, rice and a Korean coleslaw. Mine came out darker than the bright red stuff from the store. That's because my chile flakes were old. Red chiles turn brown with time. If you've ever bought one of those ristras to hang in your house you'll know what I mean. It tasted great though, just like the real thing. I chopped three heads of cabbage and it only filled the jar a little over halfway. Next time I'll halve the recipe and do two heads in a 1 qt. jar.

They stamped money to support the Stamp Stampede which was organized by Ben Cohen of Ben & Jerry's Ice Cream as a citizen effort to promote a Constitutional amendment to undo the pernicious effects of the Citizens United decision. More than 30 Kossacks from Southern California met in Los Angeles to strategize on organizing. California is going to be our first roll-out of organizing an entire state. navajo talked about the importance of having a group in each congressional district and how important it is for everyone in attendance to help by looking for potential members in the comments of each diary at Dkos. navajo also talked about using the latest tools available from HQ such as Chris Bower's Action Team's email list and Faith Gardner and Jen Hayden's facebook interface to send invites to potential members in So Cal to join in. navajo will coordinate this. Google groups for email list servs were recommended along with facebook pages set up for each district as an organizing strategy.
Meteor Blades, a precinct captain for more than two decades, reinforced the effectiveness of old-fashioned, low-budget, face-to-face, boots on the ground local organizing as a time honored way to make things happen.
Vyan spoke about how politics is personal and one has to take on that mantle to engage and influence others.
